Rediscovering pesto

This week, we are introducing you to three foods that grow in Quebec and are available in our different markets: spinach, kale and garlic scapes.

First of all, spinach is a leafy vegetable that can be eaten raw or cooked. It is delicious in salads when you want to eat it raw or in omelettes and quiches when you want to eat it cooked.

Next, kale , commonly called kale, is a variety of cabbage that stands out for its bright color when cooked. It can also be eaten in salad with tomatoes and feta cheese. Also, in the form of kale chips when put on the grill or in the oven for 30 minutes with oil and spices to taste.

Finally, we present to you the garlic flower which is found in young garlic. Indeed, when it germinates, the garlic bulb grows in the ground and produces leaves. This stem is accompanied by flower buds called garlic flower. Garlic scapes are cooked and eaten like beans or asparagus and can replace chopped fresh garlic and green onion in recipes.

Recently, we did a cooking workshop with our Ville en vert partners at Villa Raimbault with all these good ingredients! On the menu, pasta with an incredible spinach pesto with kale and delicious garlic flower that you have discovered.

This recipe is practical for using slightly tired vegetables and leftovers in the fridge as well as for making a change from the traditional tomato sauce with pasta.

During our culinary workshop, we substituted fresh garlic for garlic scapes and pine nuts for pumpkin seeds to make the recipe more affordable. These changes are at your discretion, we invite you to add your personal touch.
