This week we open the discussion on a hot topic; food waste.
Do you sometimes find yourself faced with finding forgotten items in the fridge and not knowing what to do with them? Like most people, we face the difficulty of storing food in our refrigerator. It is certain that good organization when doing your grocery shopping and using products according to their shelf life throughout the week helps enormously with their conservation. However, despite all these techniques to optimize the conservation of fruits and vegetables, they cannot remain beautiful and fresh indefinitely. Fortunately, there is always a way to give them a second life with touski recipes to reduce food waste.
THE AHUNTSIC-CARTIERVILLE MARKET WORKSHOPS
In our case, the wilted vegetables made it possible to prepare a delicious ratatouille and an eggplant crumble in a culinary workshop with the Rêve à Nous organization.
The ratatouille recipe introduced different lesser-known varieties of more traditional vegetables. For example, Valencia eggplant, yellow zucchini, purple Cherokee tomatoes and green zebra tomatoes. Once the vegetable mixture was cooked, we poured it onto pita breads to make ratatouille pizzas. We then added the classic cheddar cheese from the Vallée Verte farm with Italian sausages from the Clément le gourmand butcher shop. Finally, we put it in the oven for around ten minutes before enjoying it!
As a second recipe, we decided to make an eggplant crumble with garlic scapes. This meal option made it possible to skip wilted eggplant, day-old bread, softened tomatoes and a leftover garlic scape. We add a mixture of milk, cream and eggs and put it in the oven for about 45 minutes and that's it. We served these meals with flat-leaf parsley and good fragrant basil from the La Vallée du Tilleul farm.
Finally, there are a multitude of ways to reduce food waste. Whether by properly organizing the fridge, planning meals, processing fruits and vegetables or preparing touski recipes. All methods are good and even allow us to develop a certain creativity with food, to discover new recipes and new mixtures. Enjoy your discovery and enjoy your meal
